Make the sauce

Blend everything smooth with an immersion blender. Keep it in the fridge until the pizza comes out of the oven, then warm it gently in a small pan and ladle it over the cheese in two racing stripes down the length of the pan. Keeps 3 days.

Put it together

Once the sauce is made, for each pan
  1. BeforePress the brick cheese cubes over the dough and right up against the pan walls. That edge is where the frico crust comes from.
  2. BeforeScatter the mozzarella over the middle, then lay the pepperoni straight onto the cheese.
  3. AfterSpoon the warm sauce down the pan in two racing stripes once it's out of the oven, never before. Cut into squares in the pan.
